Apple Cinnamon Baked Oatmeal


3 cups old fashioned oats

*1/4 cup brown sugar (or sugar substitute)

2 tsp baking powder

2 tsp cinnamon (apple pie spice would be good too)

1/2 cup egg whites

1 1/2 cup almond milk

1/2 cup applesauce

2  tsp vanilla extract (banana and/or maple would be good too)

1 medium apple (peeled, cored, and chopped )

*If you like your oatmeal sweeter, use 1/2 cup.


Preheat oven to 350 degrees. Spray 9 X 9 in baking dish with nonstick spray.

In a medium bowl, combine dry ingredients.

In a small bowl, combine wet ingredients.

Pour wet ingredients and into dry ingredients. Mix well.

Fold in chopped apple. (I used a granny smith apple)

Pour into prepared baking dish and spread out evenly.

Bake for 35-40 minutes.

Serve hot or cold alongside your favorite protein for a more filling breakfast.
